Poolside Recipe – Chinese Chicken Salad from your Houston Pool Builders, The Pool Man, Inc.

Here is a Chinese Chicken Salad recipe that goes nicely poolside. Ingredients: 8 chicken thighs (boneless, skinless) cut into bite size pieces 1/4 C of cornstarch & corn or olive oil1/8 tsp of garlic powder 1 tomato, cut up1/2 C sliced water chestnuts 1 (4oz) can mushroom pieces, drained 1 C ea:  chopped celery, green onion 1/4 C of soy sauce 2 C shredded lettuce Cooked Rice Directions: Mix chicken in cornstarch. Heat oil in frying pan over med-high heat. Add chicken & quickly brown. Sprinkle with garlic.  Add tomato, chestnuts, mushrooms, celery & onion. Stir in soy sauce.  Cover & simmer 5 min.  Remove from heat , toss in lettuce & serve over rice.Enjoy! Sweet Recipe from your Houston Pool Builder

Here is a great candy recipe from Heather Williams – Silky Caramels: 1 cup butter, plus more for pan if desired 1 pound brown sugar 1 dash salt 1 cup light corn syrup 1 can (14 ounces) sweetened, condensed milk 1 teaspoon vanilla extract Line a 9-inch square pan with nonstick foil, or butter it very well. Melt butter in a heavy two-quart saucepan. Add brown sugar and salt, stirring until completely mixed. Stir in corn syrup. Slowly add condensed milk, stirring constantly. Cook and stir constantly over medium heat until candy thermometer reads 245 degrees (firm ball stage). Remove saucepan from heat and stir in vanilla. Pour mixture into square pan and allow to cool completely. Once caramel has completely cooled, cut into squares using kitchen scissors or a sharp knife. Wrap caramels in wax paper squares and enjoy! Warm Drink Recipe from your Houston Pool Builder

For these cool mornings or a quick warm drink before bed try this Spiced Cocoa Mix, by Loretta Chilek: 3 ½ cups brown sugar, 2 cups cocoa, 2 teaspoons ground cinnamon, ½ teaspoon ground nutmeg, ½ teaspoon ground cloves, ¼ teaspoon salt Combine all ingredients in a food processor or in batches in a blender. Process until well powdered. Store in an airtight container. To serve, combine 1 ½ tablespoons of mix with 6 ounces of hot milk.  Enjoy and stay warm! Key Lime Pound Cake Bites Recipe from your Custom Pool Builder in Houston

1 1/2 cups unsalted butter, softened, 8 ounces cream cheese, softened, 3 cups sugar, 6 large eggs, 3 cups all-purpose flour, 1/4 teaspoon salt, 1 tablespoon vanilla, 1/2 teaspoon almond extract, 2 tablespoons key lime zest Preheat oven to 350 degrees. Beat butter and cream cheese on medium speed with an electric mixer for about 2 minutes, or until creamy. Gradually add sugar, beating for 5 to 7 minutes. Add eggs, one by one, beating just until yellow is incorporated. Combine flour and salt. Slow mixer to low speed and gradually add to the butter mixture, beating just until blended. Stir in extracts and key lime zest. Spoon into paper-lined mini muffin pans and bake for 17 minutes or until a toothpick inserted into center of one cupcake comes out clean. Cool pans on wire racks for 10 minutes, remove cupcakes from pans and cool completely. Servings: 30. Serving size: 2 mini cupcakes. Tahitian Salad: 1 small box (6 ounces) wild rice, cooked per directions, 1 can (11 ½ ounces) mixed vegetables, drained, 1 can (7 ½ ounces) corn, drained, 1 onion, chopped, 1 tomato, chopped, ¼ bell pepper, chopped, 3 stalks celery, chopped, 2 hard-boiled eggs, chopped, 1 cup reduced-fat mayonnaise, ¼ cup vegetable oil, ¼ cup vinegar, ½ teaspoon garlic salt, Salt and pepper to taste Mix all ingredients in a large bowl. Summer Berry Cobbler Recipe from your Houston Pool Builder

Recipe of the MonthA great treat after a long hot day this summer and easy to prepare! Ingredients: 4 cups fresh strawberries (or fruits or berries of your choice) 1/3 cup sugar 1 lemon, juiced ½ teaspoon cinnamon 2 tablespoons cornstarch 1 pkg. Betty Crocker Sugar Cookie Mix 1 stick plus 3 tablespoons butter, softened 1 egg 1 teaspoon vanilla extract Preheat oven to 375 degrees, spray an 8 X 10 inch baking dish with cooking spray. Add berries to the dish. Sprinkle sugar, lemon juice, cinnamon and cornstarch over berries. With a spoon, mix gently to coat the berries. In small pieces, add the 3 tablespoons of butter on top of the berries. The berries are “prepped”! For the “cobbler” portion of this recipe – Mix sugar cookie mix, 1 stick of softened butter, 1 egg and vanilla extract in a large bowl. Using your hands, mix well until you’ve formed a soft dough. Grab a piece of the dough about the size of a golf ball and press it into a pancake shape. Place your dough pancake on top of the berries. Repeat this process until most of the berries are covered. You don’t have to cover the berries completely, and you can overlap the dough. ( you might have a bit of dough left over) Place cobbler dish in preheated oven and bake for 25-30 minutes, or until crust is golden brown. Let cool for 10-15 minutes. Basic Burger Recipe from your Houston and Cypress Pool Builder

Here is a simple burger recipe from Steven Raichlen:
  • 2 ¼ pounds ground round, chuck or sirloin
  • 6 slices sweet onion (optional)
  • 2 tablespoons unsalted butter, melted
  • Divided salt and pepper
  • 6 hamburger buns
1.      Divide the meat into 6 equally portioned patties 2.      Set up the grill for direct cooking and preheat to high 3.      If using onion slices, brush both side with butter and season with salt and pepper. Grill until nicely browned, then transfer to a plate 4.      Brush one side of the meat patties lightly with butter and season with salt and pepper. Arrange buttered sides down on the hot grate and grill until bottoms are nicely browned, 4 – 5 minutes 5.      Brush and season the tops. Then turn the burgers and grill until cooked to taste, 4 – 5 minutes longer for medium 6.      Brush the cut sides of the buns with the remaining butter and toast them on the grill during the last 2 minutes 7.      Serve the burgers and onion on buns with your choice of toppings Everyone “adjusts” to make this basic their own but it is always good to have a solid recipe to start with!
